Cookie Club Recipe #1

I am so excited about posting tonight. I just announced my giveaway winner and now I an adding my first recipe for the Cookie Club. How fun for me!

So here is our first cookie recipe of many. It is a bar cookie called Jerome Cookies. I have no idea why they are called this unless someone named Jerome created them or just loved them like I do. This is something my Grandmother has made for as long as I can remember during the holidays and I can never eat just one. Yummmmmm-o! Jerome Bar Cookies

1-1/2 sticks of butter
1 egg
1/2 c. milk
1 c. sugar
1 can coconut
1 cup graham cracker crumbs
1 pkg whole graham crackers

Topping

2 c. powdered sugar
1 stick butter (softened)
3 Tbs. milk
1 tsp pure vanilla extract

Topping Directions: Combine all ingredients for topping and blend together using an electric mixer until smooth.

Cookie Directions: Line a 9x13 pan with whole graham crackers. Melt butter in sauce pan. While butter is melting , beat egg, 1/2 c milk, and 1 c. sugar Add to melted butter and bring to a boil stirring constantly. Remove from heat and add chopped nuts, coconut, and graham cracker crumbs. Stir until well mixed and pour over whole graham crackers and spread evenly.
Add another layer of graham crackers on top. Spread the topping mixture evenly over graham crackers. Chill in fridge for at least 2 hours before slicing into squares. Enjoy!!!

  2. Carrie....please tell me you are going to post some without coconut!! We are not coconut eaters here...:(

    I am so excited to see how your bars turn out Suzi.

    Tam- you are in luck! These can be made without coconut. My grandmother makes them both ways. She doesn't eat the coconut either. Try it let me know what you think.
    I will definately post some without coconut too. :)
